It all began with a simple yet ambitious idea. Founder Atsushi Ishida left his corporate career to pursue a groundbreaking vision: opening a plant-based ramen restaurant. At the time, plant-based ramen was still relatively unheard of, and many doubted it could succeed. But driven by his belief in making the impossible possible, Atsushi set out on his journey.
After training in Japan, Germany, and the Netherlands, he met chef Megumi in 2017. Chef Meg, a talented vegan chef with years of experience in both Japan and the Netherlands, joined Atsushi to bring this vision to life. Together, they created the menu of Men’ Impossible; a tribute to Japanese culinary tradition, reimagined for a more sustainable world. The dishes embody the essence of Men’ Impossible: innovative, authentic, and unbelievably delicious.



Our noodles are the heart of every dish, handmade fresh each morning in our restaurants. This ensures every meal is fresh, high-quality, and sustainably produced. By preparing just what’s needed each day, we ensure every meal is as fresh as possible while minimizing food waste—a commitment we’ve upheld since day one.
Our menu are designed to source as much as ingredients locally, reducing food miles while supporting regional producers. We’re driven by the belief that delicious food shouldn’t harm the society and people who share our precious planet with us.

In 2020, Atsushi met Akihiro, a seasoned restaurant manager with experience in Japan’s renowned ramen scene. Akihiro was drawn to Men' Impossible’s mission and decided to joined the journey. He took over the restaurant during the challenging early days of the COVID-19 pandemic. Together, expanded Men' Impossible’s reach, bringing plant-based ramen innovations to new locations and collaborating with like-minded partners across the globe.
Today, Men' Impossible is proud to call Amsterdam home while sharing its vision with the Netherlands, Belgium, the UK, Japan, and beyond. By combining Japanese traditions with the Dutch values of sustainability and inclusivity, we’re growing a vibrant community of plant-based ramen enthusiasts.
